i know what you mean. i just tried it a little while ago. it doesnt make sense, braking is really weird with the heel, hard to get a feel it.

My ankles dont twist easy enough to use my heel on the gas. I put the brake just past the ball of my foot (toward the heel) and use my little toes to tap the gas. I dont use my heel for anything. I think it really depends on your pedal setup and foot size. That guy in the video has tiny feet and tight shoes with wide spaces between the pedals.
