80lb injectors are a little higher then 800cc injectors
80lb injectors on my V6 would be good for about 700whp on my car race fuel.
using E85 as the guy from Trick tuners said you need to maximize your fuel system 30-40% more!
so if you are aiming for 500whp you would have to setup a fuel system for about 800whp
or you can look at it if you have a fuel system on race or pump that will make 1000whp safe then on E85 you're only good for about 600-650.

but E85 has a good octane rating and makes great power and cost about $2.50 a gallon. vs C16 at about $80 for 5allons. some places ive heard you can get for $45 but either way thats $9 a gallon. i dont care about the cost so much, i just want to try the E85.
after the setup with the V6 is done im throwing in a new motor anyway. not a v6 or v8 something different
my good friend in texas is running 80# injectors with stock fuel rails, -8 line to fore hat with twin ford gt supercar pumps and dual fpdm's with kb bap with no issues on 21+ lbs of whipple 2.3 boost on his 03 cobra. Another friend has the same setup but with the gt 500 twin kb bap. Again on an 03/04 whipple cobra. He made a ton more rwhp vs. 100 octane race gas.

I would think 80's would be plenty as long as you have enough pump and line to keep the rail full and happy.

a V8 is different, you can run a little more power then a V6..i think its like 100or so theres a table somewhere
either E85 is on the edge
