The difference is the diameter of the ring gear inside the differential. The numbers (7.5, 8.8) are the diameter in inches. All else being equal, a larger gear is stronger.

All V8 Mustangs since the mid-80s have 8.8s; 4-cylinders and V6s have the 7.5. As of next year, all new Mustangs will come with the 8.8.

Most 8.8s are stock with a LSD (all 8.8s in Mustangs are), most 7.5s are open.

There ARE some advantages to running the smaller differential. The biggest is that it's lighter, which means less parasitic loss through the drivetrain. The 7.5 is still good to more power than most people give it credit for, it's only real disadvantage is that it's an open diff, and it's usually cheaper to replace the whole axle than it is to install an LSD in the 7.5. 8.8s also has a much larger aftermarket.
