I know nothing about this set-up

It will be a 331 with the GT40 heads

I need to know from someone with this set-up or who has experience with this set-up

331 has bigger displacement than a 302 right? so it needs moar air. gt40 heads barely flow enough for a 302

they will be ported of course. THe GT40's will be ported for more air flow.

I would say with ported gt40's your really defeating the purpose of increasing the stroke.

Serious, yes. Ported or not, GT40s are a good mild 302 head and that's it. They will work on a 331 or 347 but the engine will be done making power by 5000 rpm. Bad combination.

what about some 69 or 70 351w heads would they work better than gt-40 or gt40p?

No. The P heads are probably the best production Windsor head. Production Windsor heads aren't going to be a good match to big cubes.
