what do the heat ratings on plugs mean and how does it affect performance?

The heat range is the plugs ability to dissapate heat. Engines with high compression or power adders (nitrous, turbo, supercharger) need colder heat ranges. As far as a performance gain, there is none. You won't gain any performance from just changing heat ranges.......but running the correct heat range will prevent you from having a pile of melted aluminum in your oil pan.
