Stock block? Turbo all day long. It's much more forgiving on the block because it's not an instant shock of power. Both on a stock block is asking for trouble. Do you mean an actual fogger system, or just nitrous in general. Foggers aren't cheap and you generally run a lot of nitrous through them.

Just nos in general. Like a 100 shot alone or like maybe a 25-50 shot with a turbo. The turbo wont choke on the stock fuel system? This would be on a carbed car.

Well yea, if you use the stock fuel system, you'll blow up pretty quick with either set-up. Both require a good amount more fuel than a stock engine requires. If you do the turbo, I'm fairly certain you'll need a blow through carb.. but not 100% on that. My knowledge of carbs is about none whatsoever, lol. Really depends on the turbo and how much power you're making if the small hit of nitrous will break it or not while running a turbo. A stock engine will take a 100 shot all day long if it's tuned right and the rings are in good shape.
