Depends on if you're keeping stock stroke or not and how much power you want to make. 302 has a lighter rotating assembly and stock for stock stroke, I'll take a 302 any day of the week. If you plan on stroking it, 351 is my choice.

Might want to check the section for the 98 mustangs for info on the swap if you don't get any here. I don't know much about mustangs after the fox platform and that's what this section is about mainly.

Stay away from noisy timing gears if you want my advice. All they do is transfer harmonics. An inexpensive double roller timing chain set is a much better option in my opinion.

what is your plan and budget? 351 are more capable of big numbers and can hold more power without braking the block but its gona cost a little more, but if you just want to shoot for say the 300rwhp then the stock block is the way to go

personally ive always wanted to take a 351 convert it to a roller, slap in a big h/c/i and boost the hell out of it with a centri supercharger
