Man that sounds like fun! I used to have a pickup that every time the floor mat slid forward and got under the pedal it would stick when I mashed it all the way to the floor. It could be the springs, the cable or more commonly carbon buildup in the throttle body. I'd start by cleaning the throttle body. You can break it down into sections to eliminate and rule out parts if it keeps doing it.

A friend of mine had that happen to him last friday at the local dragstrip!
Its an 1/8 mile track and he went through the big end stuck wide open at 99.5 mph. He shut the key off and hit the sand but he and the car are ok. Same situation, pin down floormat caught the pedal. He did run a 7.18 though, LOL! Pretty fast for a 5 speed.

also check the motor mounts, if it sticks when you get down on it, the motor may be lifting and binding the linkage/cable. be careful, good luck

theres a bolt inter the throttle body with a spring behind it. If you loosen that up it should solve your problem.
