Do a 347 right away. That extra 16 cubic inches is worth it. Don't buy into that rod to stroke ratio bullshit. There is absolutely no truth behind it. A 347 is not any weaker than a 331 or anything else. They don't have oil burning issues either which is another myth. A big block Chevy has a 1.533 rod to stroke ratio and a 347 has a 1.588. Does that mean a big block Chevy is less reliable than a 347? A Chevy 400 has a 1.484 rod to stroke ratio.

Buy an Eagle cast steel 3.4 stroke crank, Eagle 5.4 I beam rods, forged pistons if the engine will see nitrous or a blower otherwise use hypereutectic pistons if the engine will be naturally aspirated, TFS R series or CNC ported 185cc Twisted Wedge heads and the proper EFI or Carbureted intake. Pick out a good cam that will match the combination and will also depend on what he wants out of that engine. It doesn't take much to make 500 horsepower with a 347 and it will be plenty reliable. I've built many of them.
