Ok heres the deal, I found a Paxton adjustable fuel pressure regulator for real cheap, and was wondering if I could see any increase in power with my practically stock GT

Well it won't hurt but I doubt you will get much out of changing the fuel pressure. You can buy new AFPR's for about $70-90 so I hope your "cheap" is a lot lower than that. I've had bad luck with new ones so I personally don't think I'd consider a used one, just my opinion though.

yeah I really doubt you will see any increase on a stock car even thou they claim you can if tuned properly
