engine machining next session

alright i have been pondering about what to do with my 5.0. i am getting 1600$ and have about 400 right now. so im working with about a 2k budget.
starting engine maching class next session and im tryin to figure out what to do with my car. 331... 347... or 302 and do a few odd things that need to be done ex: fuel press regulator with gauge, engine temp gauge, oil pressure gauge, fuel pump, 24# injectors with calibrated MAF, roll cage, sub frame connectors, electric fan, aluminum drive shaft, WC t-5 swap, full 3" exhaust and long tubes maybe, upgrade ignition if i have the money, and a few other odds and ends i need to finish up.

Heres what i have so far, edlebrock top end kit: cam, heads, intake. 70mm throtle body with spacer, 3.73 gears, stock AOD, off road H pipe, 2.5" exhaust with shortys, 1.6 lifters, CAI inside fender style, pullys, accel coil, intake manifold spacer, AC delete, smog delete.

what do you guys think?
