cooling problem

Here is my problem, my coolant does not maintain any sort of constant temp at least accoding to the temp gauge. When I bought the car the coolant gauge did not work and the electric fans were wiried so that as soon as the ignition switch is on or even in the accessory position the fans would turn on. I installed a new temp sending unit and rewired the fans with a thermostat. If the car is not moving the temp will go to normal operating temperature. When moving it will drop to the bottom of the gauge. I am thinking that maybe the thermostat might not be closing properly but am not sure. I also have a small coolant leak from the intake manifold. I don't think that is the reason but thought I would throw that in there. Any suggestions would help, thanks.

a stuck open t-stat can cause overcooling. also a siezed fan clutch can cause that but you have electric fans.
