holley 600 cfm tuning/issues

I watched the video on basic tuning for the holley series carbs. On the part that explains the idle mixture screws, it says to screw them in till you feel it starting to get tight, then backing out 1.5 turns. I went and looked at how mine were and i had to screw it in on both sides till probably 5 to 6 turns. I did it like the video and the car wouldnt stay running so i pulled them back out to 4 turns and it runs fine now. my question is, why would they be pulled out so far to what the video says it to be?

current setup to help solve problem - windsor jr heads, e303 cam, timing advanced to 12*

They're all gonna be different, mine were about 4-5 turns out. I always turn them all the way in, then turn them out 4 turns, and start the car, then fine tune it from there.
