97 Mustang GT
I'm new to this whole mustang deal. I may be buying one from my father-in-law. Why do they have six converters?

no need, just emissions crap, if your state doesnt do emissions testing drop in an o/r x pipe, sounds sexy and improves exhaust flow

I know brands such as magnaflow make catted X-pipes, with one cat on each side. I'm pretty sure those are SUPPOSEDLY 50-state legal. I would recommend that

If your state just plugs it in to check the emissions then you can get a set of MIL's to trick the computer and you will be fine. If they do a visual inspection of the emmissions system then you probably want to go with the high flow cat setup. Unless you got a friend that does inspections......
