Going to do Headers and full exhaust should I get 2.5 in or 3 in

2.5 will be fine

People tend to go over board with the exhaust diameter. Remember your engine NEEDS some back pressure in order to give you the numbers you are looking for.

2.5 should be good to around 450-500 and above that I would go 3.0. I am running a 2.5 and pushing 458 to the ground if that helps you.

+1 - no need for over kill unless you have big plans down the road.

a recent 5.0 mag done a test on a 3v mustang and they ran 3 inch exhaust and it gained less than 10 horse to the wheels i believe. that car a had a blower on it also lol. 2.5 can support alot of power. 2.5 seems to be the happy medium and its what most people run.

My friend is using a 2.5 on his whipple cobra and its pushing 700hp. 3in is plain overkill unless you are strickly building it for the track and have some major nitrous or forced induction goin on.
