Well I'm pretty sure the defrost pulls from outside air. Do you have any exhaust leaks?

Does it do it even when you're driving down the road?

Sounds for sure like you have an exhaust leak that is getting into the interior.
Maybe a leak around your H-pipe or something.

do you have any "tick" sounds ?

I agree with exhaust leak but my impression is heat/defrost come from the engine bay area drawing ambient heat. MAY BE WRONG!!. but id start for checking for leaks from the headers/manifolds then follow exhaust out back. even when my car ran rich with no leaks leaks my heater didnt smell like exhaust.
