not much louder and yes the Check Engine light will come on.
you would be better off getting a mid pipe.
such as an H pipe, X pipe, or Pro chamber.

It will make it alot louder, and you will need Mil eliminators on your rear o2 sensors or your check engine light will come on. I am curious as to how you are gonna gut the cats on your stock pipe. There are so many bends in the pipe to get anything in there to cleanly gut the cats. You will wanna make sure you get all that material out of there to keep a chunk of it from cloggin your mufflers.

It wouldnt be worth the time and effort to cut the cats out and weld them back in, theres really no way to gut them without cutting them out. You can usually come across a off-road x or h pipe fairley cheap. But to answer your questions, yes the light will come on, you need MIL eliminators to get keep it off. And it will make the car alot louder.
