Don't know much about a 75 Mustang, but they are light and a 289 is the right motor for it to make it fast. A stock 75 was very slow, but with work they could be fast. In the mid 70s everything was about gas. In 77 or 78 they started putting a bunch crap on your motor that killed the horsepower.
I think the frist thing would be to get rid of that 2 BBL carb. I think I would redo the whole motor. Start with the heads. Most of the power comes from the heads. Run 10 to 1 flat top pistions. Get a nice alum. intake and a matching cam.

Is it a 4 speed or a auto? Did they have 3 speeds in that year?
