Seatbelt and Harness Options in a 1966 Coupe

I picked up a 66 coupe a while ago as a project car. Finally got it running, just have the brakes and clutch pedal (manual conversion) left to do. I'm not very excited about just having lap belts in my car when it's done. I've searched around and done a lot of reading and it seems like it would be difficult to put a harness in my car without a rollbar, and I do want my back seats useable.

I read that if I mount the shoulder straps to the floor it is unsafe in an accident. I did pick up some racing seats with holes for the straps to go though, is it still unsafe to mount them to the floor?

I have found these:
Shoulder Belt
But would prefer this if i can figure out how to mount it
3-point Retractable

I would prefer a harness over a shoulder belt if I can do it, what have you guys done? Any recommendations for a harness/rollbar that keeps my rear seats useable would be greatly appreciated, thanks!

Here's how I did it a few years back
Seat Belts w/Shoulder harness

On a coupe, I think you have to fish the bracket up in behind the structure, but essentially it's the same install effort.
