I have a 67 coupe and I was wondering how hard it was to redo them?

Not that hard but if you have never done it before and have the extra money to have someone do it just do that that way you no it staight and it will save you time.

But if not just do it yourself you should be able to do it with some time

There are some really nice seat reupholstery kits over there which are quite cheap - I've got a set, and they are quite easy to fit and really do look good - just remember to take your time...

Set them out in the sun before you put them on.
