The Official MM Recipe Thread!


This may be a good idea....or not. I think it may be a good idea with Holidays coming that we post up some favorite recipes you may have and want to share. They should be tried and true, can't screw up, recipes that are your absolute favorites.

Important that we stay on topic : ) and if you can, include what type of cooking gear you use. Example, if you use a heavy LeCruset cast iron enamel pot for your pot roast-that's important because it does make a huge difference...for the better.: )

So let there be FOOD!

Pan Seared Steaks With Red Wine Sauce


My Fav Steaks!!

Cooking steaks with heavy 18/10 stainless steel 12 inch skillet-no not use non-stick pans due to exteme temps and carmalization necessary to create a yummy steak.

STEAKS

4 boneless steaks about 8 ounces ea <rib eye 1 1/2" thick is good>
salt and pepper <I rub it in the steak>
1 tablespoon vegetable oil.

RED WINE SAUCE

1 tablespoon vegetable oil
1 shallot, minced <do not substitute>
3/4 cup beef stock <canned broth OK>
1/4 dry red wine <any, I've used Merlot>
2 teaspoons brown sugar
3 tablespoons unsalted butter cut into 3 pieces
1 teaspoon FRESH thyme
Salt n pepper to taste

STEAKS: Pat the steaks dry with paper towels <let them rest on the counter COVERED for 30 minutes prior to cooking, just like grilling> Season them with salt n pepper. Heat the skillet, add the oil after a few minutes. Just as the oil starts to smoke a little, add the steaks. Cook over medium-high heat, about 4 minutes on one side...do not touch them until then. Turn and cook an additional 4-6 minutes <depending on how you like your steak, well done I would advise cooking 7 minutes!> But I like Rare. Remove to a plate and tent foil let rest 5 minutes

SAUCE

In the same skillet, you have all these great brown bits-you want to deglaze the pan to get all that goodness! <The sauce calls for adding additional oil...I didn't so it's your choice.> return the heat to medium high add the shallot and cook 2 minutes stirring. Stir in the broth, scraping the browned bits on the bottom of the pan, it will sizzle and steam, that's what you want. Then add the wine brown sugar and simmer until slightly thickened. Turn the heat to LOW and wisk in the butter and salt and pepper to taste.

Spoon the sauce over the steaks before serving.

Living in the south...most of my favorite recipes are done on charcoal and gas grilles, smokers and a turkey fryer...knowing a lot of ya'll might not have that equipment, I'll come up with some alternatives for oven and range-top recipes soon.

Wow I want a steak now!

I make killer ramen.

First I put about 2 cups of water in a pan.

Then I heat it till it boils.

After that I put the noodles in the water for about 3 minutes.

Then I add the super secret seasoning and stir it up.

It's just my little recipe.

That sounds good Shar.

One recipe that I like to make is oatmeal in the morning.

I just add all this in the pan at once.

Oats
milk (amount depends on the oats)
some butter
cinnamon
apple sauce
honey
molasses
chopped apples
sliced bananas
chopped peaches
and occasionally I'll throw some raisins in there.

Just throw it all in the pan and cook it on medium heat until it's done.

You add all of that?? I do like the idea, love those Peaches n creme instant oatmeal...but this sounds really good. I'd have to cut down the sugars tho...so maybe I can adjust it. I'm thinking keep the organic applesauce, chopped apples,bananas...hey do all those fruits taste good together?? Really? I want to try this!

Cheese Dip (delicious), out of about 100 people that have had this at my partys about 90 has asked for the recipe

Ingredients
1 large block of velvetta
1lb ground beef
2 large tomatoes, or 3 small ones
half a onion
jar of jalapenos
Crock pot

Cut up velvetta into small cubes and heat in microwave until decently melted
Put into crockpot
Cook 1lb ground beef, drain and add to crock pot
Dice up the tomatoes and half a onion and add to pot
Pour half of the juice of the jar of jalapenos into pot and then add jalapenos for spice, for mild about 2 jalapenos and for hot you can add however many you want
Stir together in crockpot, set on high, stir occasionaly for half a hour and should be good

Add chips and your done.

Now i am hungry for it and think i am going to make it tomorrow just for myself lol

anyone ever make home made sliders? I did! They were fah-king unbelievable !


1/4 dry minced onion or packet of lipton onion soup
3 oz jar baby food-beef
1 lb ground beef
1/2 cup beef broth

some cheese

hot dog buns

brown the beef with a little salt n peppa

then mix all ingredients in a bowl with some cheese

make into a paste and put it on a pan....cook at 350 degrees for 15 minutes

cut hot dog buns into thirds and cut sliders from pan and place on buns with what ever you like to put on sliders.

I make a mean mac and cheese!

Instead of adding milk, use a bit of ranch dressing instead. Adding some tabasco sauce also gives it an excellent kick.

Arsenal's Fried Chicken

Flour, paprika, onion powder, ground pepper, salt, creole seasoning, eggs, milk, chicken.

put everything but the eggs, milk, and chicken in a bowl. add whatever extra seasonings you want.

put eggs and milk in another bowl. put enough milk in so that when you whisk it all up, it looks like scrambled eggs.

cut chicken to size, dip in flour and seasoning first, then in egg mixture, then in flour again. fry in veggie oil until golden brown.
