What does an X/Y pipe actually do

I had a motorcycle that had a system that brought the 2 pipes together, was told it helped the power, but just curious about why I would want to run a X or a Y or anything. What would be the problem if I ran headers, the cat, and then nothing else all the way back.

What to I get by connecting the 2 sides?

X pipe evens out the flow of cars with uneven firing orders. Y pipes are a restriction- no power, no way.
