Rear gear size

What size is the rear gears on an 89 LX 5.0? 8.8 or 9" or, i shudder to think, a 7.5?

It's 8.8 - the 7.5's were used in 4 bangers Mustangs and pre '86 5.0's. 9" rears weren't ever put in the fox body platform (79-04) Mustangs, but can be swapped in with some finesse (although practically never needed).

I helped a friend swap a 9" into and 84 lx and it was fairly easy. the part that requires the most finess is welding the brackets the the housing and getting the angles all right.

There are so many companies that make bolt in 9" housings and assemblies now it really isn't worth the hassle to fabricate one that will work anymore. A 9" really isn't necessary until you are making over 1000 hp.
