clutch/cable
I recently replaced my clutch cable on my 91 gt and a couple of months later I can't get the car into gear. Prior to the most recent issue the car was shifting better than it had in a long time. The cable is good no problems. Could it possibly be the clutch fork.

Depends on what happens when you try and put it in gear. It is possible that it is actually the clutch pedal assembly. The quadrant adjuster that comes stock on the car may be stripped, so it doesn't stay in place. And in the final position, it may not be opening far enough to let the gears change. That is one possibility.
I would check that first, then look at the cable where it connects to the clutch fork. It could be the fork is bent or something also.
