315 Width Tire on a 10-Inch Width Wheel

How bad would it be to run a 315/30-18 tire on an 18X10 wheel? For that tire, you are supposed to be at a minimum of 10.5 inches for the wheel, up to 11.5 inches. Anybody ever experimented with that?

As you said, a 10.5 inch is optimal but they should fit fine on a 10. There'll be a little sidewall bulge but it shouldn't be too bad.

I am looking to run the Nitto NT-01's. I've run 305/35-18's and 295/45-18 already. I just worry about uneven wear. Especially if the tires somehow lose grip for some strange reason

Depends on how you drive the car. If you push it in the twisty bits, I'd go either narrower in the tire or wider in the wheel. If you just like to punch it in the straights, you should be fine though my strong suspicion is that you're giving up some of the potential traction of the tire due to having to run it at sub-optimal pressures to get the right footprint.
