351 289 heads in 91 gt vert

my sisters husband gave me an older 351W he bought for his 66 but never put in i was talking to some buddies lastnight and talking about putting it in my 91 gt convertible and one of them suggested putting 289 heads on it to lower the chamber size and create more power. is this true? and if i use the 351w with 289 heads could i still run my 5.0ho intake to keep my fuel injection?
