a canon point and shoot

i dont remember exactly what the settings were but im pretty sure the exposure was at 0 and i started the shutter speed at 1/60 and worked my way up from there, i took about 15 other rollings shots that didnt turn out so good.

Your a tad figgity like me. Mines probably coffee induced. The rolling shot of just the front left wheel is your best light, it was at your back.. Try and keep the sun there whenever possible.

Based on the rolling shots (none had exif data imbedded) It looks like you should do your best to stay around 1/200th to 1/250th to reduce camera shake. If light is poor in a dark way take your iso to 200 or 400. It will add a touch of noise, but it won't ruin the picture.

Rolling shots are tough, you have a few things working against you, the car your shootin going over imperfections in the road, you in the chase car going over imperfect road, human movement in an up and down manner, and lighting.

Also weem, you don't have to be doing 45-50 mph on a highway to get sweet rollers. Some of the best stuff out there is done in parking lots or low traffic side streets at less than 10-15mph.. This does a lot for you because your not moving across so much pavement i.e. less travel means better chance for a tack sharp roller. Try it, you'll understand almost immediately.
