2.5" piping into 2.25" piping
I'm installing an off road x-pipe, I currently have 2.25" divorced duals, I found a shop to weld the xpipe 2.5" into my 2.25" duals. Will there be any problems created by the diffference in size of the pipe?

The only thing it would do is raise the backpressure. I don't think 1/4" change is going to be enough to cause any problems though.

A quarter inch is huge when dealing with 3.8L exhaust mid-pipe. You will notice a small loss of low end torque. How much depends on your tuner, type of muffler, ect. All in all it should be a great upgrade. Please update with results.
