205*.65 = 133.25 mm (profile)... 26.49" total height
225*.55 = 123.75 mm (profile)... 25.75" total height

25.75 / 26.49 = .972

Your new tires will actually be LOWER profile than the old ones, meaning a lower overall height. Because of this, your speedometer will actually read slightly higher than your actual speed.

So, if your speedo is reading 60mph:

60*.972 = 58.3 mph

So, that's the change there, and you'll certainly be good height-wise.

Width-wise, you SHOULD be fine, considering that stock '03-'04 Cobras came w/ 275-width tires all around.

One problem I could see, though, is if your new wheels have some strange offset. Are these factory Mustang wheels? If not, what are they, and what is the offset/backspacing?

Stock GT's came w/ 245/45/17's

245*.45 = 110.25 mm = 4.34 in * 2 +17" = 25.68"
245*.50 = 122.5 mm = 4.82 in *2 + 16" = 25.65"

Almost EXACTLY the same height-wise, and while there MAY be some rubbing at full lock, it shouldn't be a big problem, considering they came stock on GT's.
