3.73 is 4.10 are different gear ratios.
With the 4.10s you will accelerate through gears alot faster, causing better bottom end speed, but less gas milege when floored.

The 7.5 is the gear housing of a v6 and the 8.8 is the gear housing for a gt.
The 8.8 can handle ALOT more power.

The dif is wut transmits the power to the wheels, from the driveshaft the power goes in and then relayed at 90 degree angles to the back tires through the axles, 3.73 and 4.10 are gear ratios, higher the gear ratio the quicker the acceleration, lower the gear ratio the higher the top speed, 7.5 and 8.8 are just sizes of diffs, v6's being equipped with a 7.5 and a GT with 8.8

3.73 on 4.10 are the gear ratios. a good rule of thumb is to use 3.73 if you have a manual tranny and 4.10 if you have auto. the 7.5" differential is smaller than the 8.8. because of this it is weaker. The 7.5" will break with anything over 300hp. The 8.8 can hold up to 400.

the 8.8 wont hold much past 300rwhp and torque
theres more of difference between the 7.5 and 8.8 then just the obvious size
the 8.8 has options such as 31spline and 33 spline cases you can use to hold more power
