I personally use Aerospace Protectant from my plastic trims and they work wonders.

But sometimes the scratches are too deep and I can't fix it no matter how hard or how much I use the product. Do I have to resort to polishing compound? will it even work?

You cannot use most polishes/compounds on plastic, most polishes will stain plastic/rubber and its a PITA to get off.

Im not sure if there is a plastic/rubber trim scratch fix. U may be able to fill it some how but idk how, lol.

Just 303 it and call it a day! lol

If the scratch is that deep, the only way to fix it is some kind of body filler and repainting.

Depends on the plastic type as well, polyolefin or not? If its a painted textureless piece melt it smooth use plastic body filler sand respray. But that is all beyond detailing
