My stock '02 gets 6qts every change. Reads well past FULL on the dipstick every time.
And that's fine if you never launch hard, turn the engine to redline on a regular basis, don't do any top speeds runs and take all curves at the posted speed limit, never let your oil level get low and keep fresh high quality on in there at all times. Do you get the idea of what I'm trying to say here? :D
 
To add to JayC's comment, a few months ago a member posted that he had let his oil get a quart low. He reported that during a high speed run he blew up his motor. A quart of oil is cheap insurance.
 
I have a Windsor motor. The owner's manual says 5 quarts of 5w30. Ford later changed that recommendation to 6 quarts of 5w20 with the Romeo motor. They also changed the dipstick. The oil pan will hold 8 quarts of oil without interferring with the crank. You should run 6 quarts of full synthetic 0w30 oil in your Windsor motor. Yes, the dipstick will show that you have too much oil but it will not hurt your motor. You will be running the same amount of oil as the 2001-2004 Mustangs.

To summerize, it is oil flow that protects the motor not oil pressure. The motor needs about 10 psi of oil pressure for every 1000 rpms. Full synthetic oil leaves a better film on moving parts than conventional oil. 0Wxx oil provides better cold start protection than 5Wxx oil because it flows better at cold tempatures (anything under 212 degrees). xW30 oil breaks down at a higher tempature than xW20 oil providing better high performance, hard running protection. (By the way, 30 weight oil is not 50% thicker than 20 weight oil.)

Edit: I run 6 quarts not 7. I haven't tried 7 yet but I'm certain that I want more than 5 quarts in it.
